Description
La Riva El Cuadrado is a white wine made from 100% Palomino Fino grapes. The fruit comes from El Cuadrado, a vineyard of 125 aranzadas that converge in a land divided into two halves, one facing south with a view of the Atlantic and the other facing north.
It is a very balanced grassy wine that denotes in flavour and aroma, its biological ageing, with an acidity and minerality characteristic of this winery.
Winemaking
El Cuadrado de la Riva wine is made with grapes from a small plot of land near Sanlúcar, called El Caserío de Lacave, which belonged to the Terán family, former owner of Bodegas Rodríguez Lacave.
The vines come from plots that are more than 35 years old, managed with very traditional practices that ensure the natural expression of the fruit.
The grapes are harvested by hand and carefully selected to ensure that they are in an optimal state of ripeness. The wine is then fermented in 500-litre barrels with velo de flor yeasts.
Finally, it is aged for 12 months in the same Jerez barrels.
Taste
El Cuadrado de La Riva wine has an aroma with a high citric charge, combined with a spicy background that denotes its biological ageing. As for its flavour, you can taste volume in its texture and a touch of salinity and acidity very accentuated. It is slightly bitter on the palate, but finishes with balance.
