The NV La Bota de Amontillado 125 “Bota NO” comes from the same source as the La Bota de Amontillado Viejísimo 73 “Bota Aniversario” from 2017 and the La Bota 26 de Amontillado “Cinco años después…” from 2010, an extremely old “NO” wine of exceptional intensity and concentration and spectacular complexity. It's from one of the row-end butts that rested in Pérez Barquero’s Los Amigos cellar for many decades. They have been lucky again to have access to those venerable barrels for this 125th edition bottled in 2023. This is believed to be over 60 years of average age and with a natural 20.5% alcohol through concentration from evaporation. It's old and pungent, with bitterness but not painful. It has aromas of very old wine, iodine, rusty nails, low tide, varnish, nuts and seaweed. The salty/marine side is very noticeable, peaty and smoky too, and with a very powerful mouthfeel, tasty, long and salty. 1,300 half bottles were filled in 2023.

Description
In the universe of great Andalusia wines, few reach the mystique of La Bota de Amontillado 125 "Bota NO". The result of a collaboration between Equipo Navazos and the historic Pérez Barquero winery in Montilla, this wine is an extreme rarity, an act of respect towards time, the land and the liquid memory of the southern peninsular.
It all began in 2010, when Equipo Navazos celebrated its first five-year anniversary by bottling Amontillado Nº 26, a radical, pure wine from one of the oldest and quietest butts in the house. That edition was almost secret, destined only for close friends. Thirteen years later, that same philosophy returns with La Bota de Amontillado 125 Bota NO: a wine that has been untouched for decades, untouched by the criaderas and soleras system, resting in solitude and absolute silence.
Sourced entirely from Pedro Ximénez grapes grown on albariza soils in the Sierra de Montilla, this Amontillado bears the extreme character of the Cordoba climate. No added alcohol is added: the grapes themselves reach the necessary alcohol content, allowing for biological ageing under a veil of flor, which gives way, over time, to a slow, majestic oxidation.
Winemaking
The Bota de Amontillado 125 Bota NO is not part of the usual dynamic system. It is a unique butt, selected for its exceptional character and kept out of the sacas for decades. Here time is neither accelerated nor intervened: there is no filtering or fining, only minimal intervention before bottling. The wine ages in century-old American oak, where the flor slowly disappears and gives way to pure, elegant oxidation. The average age of La Bota de Amontillado 125 Bota is NOT estimated to be over 50 years old, probably over 60. Every drop is history.
Taste
The nose of La Bota de Amontillado 125 Bota NO is deep, intense, marked by notes of toasted hazelnuts, fine varnish, cold smoke, and an almost earthy saline undertone. There is an austere nobility in its expression. On the palate, it is dry and vertical, with a structure reminiscent of bone, old leather and walnut dust. The palate is very long, with a perfectly integrated volatile acidity and a salinity that carves the palate.
This is not a wine of easy pleasure. It is a wine of concentration, contemplation and respect. A testament to what Andalusian tradition can achieve when wine is allowed to speak the language of time. La Bota de Amontillado 125 Bota is NOT drunk: it is deciphered.
