Bottled from a solera they own at Fernando de Castilla, the NV La Bota de Palo Cortado 118 Pata de Gallina is perhaps a little older than the previous bottling, the 92 (and previously the 72 and 34). This is very expressive and clean, with more finesse and character, mixing salty and nutty sensations. The alcohol is very integrated (it's around 21%) and unnoticeable. It was bottled into 0.5-liter bottles, some 3,500 of them, in the summer of 2022.

Description
A cult wine that sums up the essence of the Marco de Jerez and the philosophy of Equipo Navazos: to discover, select and bottle wines that, for their quality and personality, deserve to be rescued from anonymity. More than a decade ago, in one of their explorations, they found in the cellar of the legendary wine cellar owner Juan García Jarana some barrels aged in oxidative ageing that stood out for their elegance, complexity and depth. From those barrels a micro-solera was born, which has given rise to four very limited sacas, this La Bota de Palo Cortado 118 "Pata de Gallina" being the latest expression of this silent and noble lineage.
The expression "pata de gallina" alludes to the mark traditionally used to indicate particularly dense and structured wines within the Marco classification. This Palo Cortado is just that: a wine with the structure of Oloroso and the nerve of Amontillado, with more than 30 years of oxidative ageing. It is not an accident in biological ageing, but a deliberate and authentic way of arriving at the Palo Cortado style, respecting tradition but avoiding pigeonholing. It is aged on albariza soils in the heart of Jerez, under the influence of a temperate Atlantic climate, which allows it to develop slowly, slowly and elegantly.
Winemaking
The ageing of La Bota de Palo Cortado 118 "Pata de Gallina" takes place in an altar of butts in the cellar of Fernando de Castilla, reserved exclusively for this solera. The wine has evolved in a static oxidative ageing environment within the traditional system of criaderas and solera, with exceptionally spaced sacas. The process is manual, respectful, without aggressive technical intervention. The wine is neither filtered nor stabilised, maintaining its authenticity intact from the butt to the glass.
Taste
On the nose, La Bota de Palo Cortado 118 "Pata de Gallina" unfolds with extraordinary complexity: bitter orange peel, toasted hazelnuts, hints of incense, enveloped wood and a background of Atlantic salinity. There is an aromatic tension that evokes both the etherealness of Amontillado and the density of Oloroso. On the palate, La Bota de Palo Cortado 118 "Pata de Gallina" is dry, deep and majestic, with an unctuous texture and a citrus freshness that elevates it. The acidity, lively but perfectly integrated, cleanses the palate and prepares it for a long, saline finish, with hints of bitter almond, dried herbs and a slight noble bitterness. It is a serious, meditative and enveloping wine, not easily forgotten. Ideal with umami-rich cuisine, cured cheeses or simply to drink on its own, with time and silence.
