Description
Curiosity was the driving force. In the 1960s, when Verdejo was hardly valued outside Rueda, José Pariente was already dreaming of vibrant, lively white wines. His daughter Victoria inherited the same restlessness, but wanted to go further: to explore the potential of other varieties in her terroir. Thus José Pariente Sauvignon Blanc was born, the result of a pioneering impulse that made it one of the first Spanish whites made from this French grape. Today, several decades later, its name is synonymous with elegance, freshness and character.
The vineyards are located on the Castilian plateau, at an altitude of over 750 metres above sea level, on gravelly soils with a calcareous base that deeply marks the wine's profile. There, in Rueda, Sauvignon Blanc expresses itself in a particularly subtle way: it maintains its vivacity, but with a touch of serenity that differentiates it from its counterparts from the Loire or New Zealand. The extreme continental climate, with freezing winters and hot summers, helps to preserve the acidity and defines its aromatic intensity.
Winemaking
José Pariente Sauvignon Blanc is harvested at night, when temperatures are cooler and the grapes retain their freshness better. Once in the winery, a cold skin maceration is carried out to extract the maximum aromatic compounds. Fermentation takes place in stainless steel tanks at a controlled temperature, with selected yeasts that respect the typicity of the variety. The wine is then left on its fine lees for a short period, just long enough to gain unctuousness without losing its nerve.
Taste
The first contact with José Pariente Sauvignon Blanc is pure freshness. Notes of ripe tropical fruit - passion fruit, mango -intertwine with citrus touches of grapefruit and the classic vegetal note of boxwood that is the hallmark of Sauvignon Blanc. In the mouth it is agile, enveloping, with a very well-balanced acidity and a clean, slightly mineral finish. A white that does not seek to dazzle through exuberance, but through precision and harmony. A faithful reflection of a land that has managed to tame a foreign variety with a very traditional sensibility.
