Description
At Jacquesson, the idea of Cuvée 700 was born almost as an act of rebellion: instead of making a uniform non-vintage, they decided to bottle the truth of the year and number it like a field notebook. And the Dégorgement Tardif is their bravest decision: to leave the wine quietly on the lees until time turns it into texture and internal energy. Jacquesson Cuvée 743 Dégorgement Tardif starts from 2015 and is composed of the house's classic varieties - PinotNoir, Chardonnay and Pinot Meunier -with 60% of the vintage coming from Aÿ, Dizy, Hautvillers and Champillon(Vallée de la Marne) and 40% from Avize and Oiry(Côte des Blancs). A mosaic of villages where the limestone rules and the fruit is not important: here we are looking for edge, not perfume.
Winemaking
For Jacquesson Cuvée 743 Dégorgement Tardif, only the first press musts were used in the pursuit of purity and backbone. Fermentation and refining are aimed at building a base wine that is more "Grand Vin" than an indulgent sparkling wine, while also integrating reserve wines from cuvées N°742 to 735, which add depth without erasing the pulse of the year. The ageing is the signature: 89 months on lees, with cork closure, before late disgorgement. Dosage: 0 g/L. Disgorged in March 2024. Limited production: 19,900 bottles and 1,009 magnums. Everything here speaks of patience and an almost artisanal obsession with detail.
Taste
Jacquesson Cuvée 743 Dégorgement Tardif is not a Champagne of easy smiles: it is a Champagne of precision. On pouring, the bubbles are tiny and persistent, and a serious, almost stony point emerges, reminiscent of wet stone, toast and a hint of hazelnut. Then there is a citrus touch: lemon, tangerine peel, an echo of ginger and fine spices. The palate is as dry as a scalpel blade: Extra Brut, zero dosage, all tension, salinity and a noble citrus bitterness that cleanses the palate. The very long ageing does not fatten the wine; it compacts it: it makes it longer, sharper, with that chalky finish that lingers like chalk dust on the tongue. A gastronomic Champagne for those who prefer a straight line to make-up: minerality, measured acidity, and a persistence that never seems to end.
