Disgorged in February 2021 with 0.75 grams per liter dosage, the NV Extra-Brut Cuvée No. 744 is based on the 2016 vintage. Exhibiting complex aromas of orange oil, crisp stone fruit, fenugreek and subtle hints of yellow Chartreuse, it's medium to full-bodied, pillowy and seamless, with terrific depth at the core, lively acids and a pinpoint mousse. Simultaneously vivid but replete with sapid nuance, this new release throws into relief all the work the Jacquesson brothers have made in the vineyards and cellar over the last two decades.

Description

Jacquesson never wanted to make a "non-vintage" joker. The idea of Cuvée 700 was born as an act of elegant rebellion: numbering each edition so that the Champagne behaves like a vintage wine, with memory and character. In Jacquesson Cuvée 744, the heart is 2016 and its vines are spread between the Grande Vallée de la Marne -Aÿ, Dizy and Hautvillers-and the Côte des Blancs -Avize and Oiry-, a perfect seam between chalky power and mineral edge. Here the chalk and marl soils, the cold northern light and the climate that forces the vines to think before they speak are in command. The blend combines Chardonnay (mostly), Pinot Meunier and Pinot Noir; and, as a signature of the house, it is completed with reserve wines from previous cuvées: a liquid library that gives depth without making up.

Winemaking

The 2016 harvest began on 19 September and ended on 6 October, with a break to wait for late-ripening plots. In the cellar, Jacquesson Cuvée 744 is built with surgical precision: gentle pressing, clean musts, careful fermentation to preserve the tension and transparency of the terroir. Then comes the ageing on lees, seeking texture and that "pillowy" sensation without losing nerve. The tirage initiates the second fermentation in the bottle; patience does the rest, refining the bubbles and complexity. Disgorgement is measured and the dosage is almost symbolic (0.75 g/l): Extra Brut in the most literal sense, with no sweet concessions.

Taste

On serving, the bubbles are very fine, almost needle-like, and the first impression is one of crystalline purity. Serious citrus on the nose -lemonpeel, orange oil -and crisp stone fruit, with a spicy nuance reminiscent of fenugreek and dried herbs. It's not looking for easy applause: it's more like a hushed conversation over wet chalk, fine bakery and a touch of herbal liqueur. On the palate, Jacquesson Cuvée 744 enters broad but straight, with lively acidity that carves out the centre and a salinity that lengthens the finish like a tide. Lively, sapid, persistent: a Champagne that drinks like wine and leaves the tongue clean, mineral, begging for oysters, blue fish or simply another sip.
