Description
Guiborat De Caurés à Mont Aigu Grand Cru is an exceptional champagne that comes from two Grand Cru classified plots in the village of Chouilly, in the Côte des Blancs region. This champagne is made exclusively from Chardonnay grapes (100%), offering an intense, fresh and highly complex aromatic profile. The nose delights with notes of lemon, citron, pink grapefruit, white flowers, green apple and almond, while the palate is salivating, fresh, delicate and mineral, culminating in a lime zest finish.
Winemaking
The production of Guiborat De Caurés à Mont Aigu Grand Cru follows the principles of Sustainable Agriculture, avoiding systematic treatments and resorting to them only when strictly necessary. The grapes are harvested by hand and immediately pressed slowly. Only the must from the first press is used, and after alcoholic fermentation, without malolactic fermentation, the wine is aged on the lees for 7 months. After bottling, sugar is added for the second fermentation, and the bottles rest on the lees for 68 months. After disgorgement, a sugar dosage of 1.5 g/l (Extra Brut) is added, and the champagne rests again in the cellar for a further 9 to 12 months before release.
