Description
Guiborat Prisme Grand Cru Extra Brut is a sublime expression of the Côte des Blancs terroir, remarkable for its pure composition and meticulous winemaking. This Blanc de Blancs champagne is made exclusively from Chardonnay grapes (100%), sourced from four specific plots with white chalk soils, providing a distinctive minerality and water retention capacity that significantly benefits the vines. The harvest of the current vintage forms the basis of this champagne, complemented by 8% of the reserve wine, ensuring continuity and complexity in its profile.
Winemaking
Vinification follows the principles of sustainable agriculture, with manual harvesting and slow, immediate pressing of the grapes. Only the must from the first three pressings is used. After alcoholic fermentation, malolactic fermentation is interrupted to preserve its freshness. The wine rests on its fine lees for 7 months in stainless steel tanks before its second fermentation in the bottle, where it ages on its lees for 44 months. With an added sugar of only 1.5 g/l, this champagne is characterised by its extra brut.

Guiborat Prisme Grand Cru Extra Brut offers a vibrant and elegant taste experience, marked by high acidity and a smooth texture that invites tasting. Its aromatic palette opens with lively and elegant notes of brioche, almond paste and citrus fruits, while on the palate, it is vigorous and salivating, with good tension and fine bubbles culminating in a lime finish. This complexity and freshness make it an exceptionally balanced wine, with an elegant tension that makes it stand out among champagnes in its class.
