Fernando de Castilla stems from a historic estate in the Marco de Jerez region that views tradition not as a museum piece, but as a living tool. Since the late 20th century, the winery has adopted a more precise and exacting approach, focused on bottling the purest essence of its wines, without unnecessary embellishments. Fernando de Castilla Classic Sweet Pedro Ximénez hails from a region of relentless sunshine, Atlantic winds and a centuries-old winemaking culture, where patience counts for as much as the vineyard itself. Here, the Pedro Ximénez grape variety finds its expression in concentration, depth and oxidative nobility. The aim is not to produce a wine that is merely easy-drinking or simply sweet, but rather a wine of density, character and persistence. A sweet Jerez wine that does not pander to the consumer, but presents itself with an almost old-fashioned gravitas.

Production

The base of Fernando de Castilla Classic Sweet Pedro Ximénez is 100% Pedro Ximénez, with the grapes sun-dried to concentrate sugars, extract and that dark, dense substance that defines the style. After pressing, the must begins to ferment and is fortified early on with wine alcohol until it reaches 15% vol., thereby halting the process and preserving much of the natural sweetness. It then undergoes oxidative ageing for around 8 years in criaderas and soleras, where the wine gains complexity, roundness and that nuance of raisin, noble varnish and fine spice that only time can impart. Nothing here seems modern in the superficial sense of the term, yet everything is measured with immense precision. The bottled wine retains that blend of richness, medium age and internal balance that defines great fortified wines.

Flavour

In the glass, Fernando de Castilla Classic Pedro Ximénez appears dense, dark mahogany, almost black at the centre, like an infinite reduction of raisins, dried figs and candied plums. The nose is massive, yet not vulgar. It opens with raisins, dates, molasses and dark caramel, followed by notes of roasted coffee, bitter cocoa, toffee, walnut and an undertone of old oak that seems to have been polished by decades. Everything is deep, enveloping, almost dramatic. On the palate, it is broad, viscous and opulent, but crucially, it does not collapse into heaviness. It possesses a surprising internal tension given its volume. The sweetness is immense, yes, but it is accompanied by a subtle bitterness, roasted notes and a sense of controlled density that prevents any excess. It is reminiscent of a traditional Pedro Ximénez wine, with a texture that lies somewhere between raisin cream, espresso, dark chocolate and candied fruit. The finish is extremely long, warm, dark, almost infinite. A resounding, deep and uncompromising sweet Jerez.
