Description
Fernando de Castilla has had its roots in the Marco de Jerez region since the 19th century, although the brand was founded in 1972 by Fernando Andrada-Vanderwilde and gained new momentum when Jan Pettersen acquired the winery in 1999, reinforcing that concept of artisanal Jerez, historic town centres, silence, dim light and a craft passed down through the generations. Fernando de Castilla Classic Dry Amontillado comes from Jerez de la Frontera, within the Jerez Xérès Sherry Designation of Origin (D.O.), and is made exclusively from Palomino Fino, the grape variety that best translates the soil and ageing process into the language of wine. Here lies a decision that is both quintessentially Sherry and remarkably bold: to allow the wine to live two lives, first under the flor yeast veil and then in contact with oxygen, accepting that the initial finesse will evolve into something more serious, deeper and richer in nuances.
Production
Fernando de Castilla Classic Dry Amontillado undergoes an initial biological ageing under the flor and, in a second stage, subsequent oxidative ageing. The entire process is carried out using the traditional criaderas and soleras system, in American oak casks. This is a classic-style Amontillado, fully developed, refined by time and bottled at 17% alcohol.
Taste
In the glass, Fernando de Castilla Classic Dry Amontillado displays an old amber colour and a highly aromatic nose. Yet it is neither an exuberant nor a sweet wine. It enters the palate dry and sharp, with that beautiful blend of biological delicacy and noble oxidative asperity. The hazelnuts are there, certainly, but they arrive wrapped in hints of old oak, salinity, dried orange peel and a piercing finish that cleanses and lingers on the palate. It has hints of fine consommé, toasted nuts, subtle spice and a hint of iodine. Rather than filling the mouth, it moves through it with a firm hand, leaving a dry, long and elegant finish—perfect as a serious aperitif, but also magnificent with mature cheeses, soups, poultry or artichokes.
