Description
Fabien Coche sees Saint Aubin as what it always should have been: a great hillside white – chalky, fresh and deeply Burgundian – rather than a mere shadow of its more famous neighbours. From his domaine in Meursault, now run organically, Coche has been refining an increasingly precise understanding of the vineyard, seeking to ensure that the wine speaks more of the soil than of the cellar. Saint Aubin fits perfectly into that philosophy. Here, on these high slopes of the Côte de Beaune, with a cool aspect and soils of marl and limestone, the Chardonnay finds a particularly straightforward, lively and mineral expression. There is no pursuit of opulence, but rather of tension, finesse and transparency. That is precisely what makes this Burgundy white wine so appealing.
Winemaking
Fabien Coche’s Saint Aubin is made from 100% Chardonnay, sourced from a small organically farmed plot where immense attention is paid to detail in the vineyard. The grapes are harvested by hand, ensuring maximum integrity from the moment they enter the winery. From there, the winemaking follows a classic Burgundy approach: understated and precise. The wine is aged for 11 months on its lees in barrels, with 20 per cent new oak. And that fact sums up the style perfectly: the oak is there to impart texture, depth and a slight creamy richness, not to dominate the wine. Everything is carefully balanced to preserve the wine’s natural vigour and maintain its chalky profile.
Taste
On the nose, this Fabien Coche Saint Aubin is refined, fresh and restrained, with white flowers, crisp white fruit and a delicate undertone of citrus, fresh almond and damp stone. Nothing exuberant, nothing broad; everything revolves around precision. As it breathes, a slightly honeyed note and a hint of fine wax emerge, but always within a taut and elegant framework. On the palate, it enters straight away, with a lively acidity that sharpens the wine and propels it across the palate. Ageing on the lees lends a subtly creamy texture, but the dominant sensation remains the chalky minerality, the fine salinity and that stony freshness so typical of fine Saint Aubin whites. Very Burgundian, very serious, very delicious.
