Description
Fabien Coche belongs to that old school of Burgundy winemaking that needs no fanfare to produce Burgundy white wine of immense character. From Meursault, the family has always worked in keeping with that philosophy so characteristic of the Côte de Beaune: wine is not constructed, it is revealed. Fabien Coche Saint Aubin 1er Cru Les Combes comes from a tiny plot, barely 0.3 hectares, in a prime location between Puligny Montrachet and Chassagne Montrachet. It is an almost obstinate decision, because working such a small area demands absolute precision and leaves no room for error. Here, everything revolves around Chardonnay and a commitment to the terroir. The vineyard faces east, preserving freshness and delicacy, on a combination of surface clay and a limestone subsoil that profoundly shapes the wine’s character. Saint Aubin does not seek immediate opulence, but rather a quieter, more mineral, more straightforward tension.
Winemaking
The harvest for Fabien Coche’s Saint Aubin 1er Cru Les Combes is carried out by hand, ensuring that perfectly healthy, whole grapes reach the winery. Ageing takes place for at least 12 months in oak barrels, with a clear predominance of used barrels and only a small proportion of new wood. This completely defines the style: the oak is not intended to mask or sweeten the wine, but rather to support it, giving it oxygen, breadth and depth. The wine then rests for a further 6 months in stainless steel tanks before bottling. This phase refines it further, tightens the texture and brings the mineral energy to the fore.
Taste
On the nose, Fabien Coche Saint Aubin 1er Cru Les Combes is initially reserved, very Burgundian in that sense. It does not leap from the glass, but unfolds gradually. Aromas of fresh pear, crisp apple, white flowers, a delicate hint of citrus and, immediately, that highly appealing minerality of damp stone and flint emerge. These are followed by delicate honey, beeswax, a touch of marzipan and a very subtle creaminess. On the palate, it is direct and precise, with lively acidity, an enveloping texture and a perfect balance between fullness and tension. Lemon, white fruit, chalk, a subtle salinity and a slightly creamy undertone. The finish is long, cool, chalky and tremendously elegant.
