Anchored in Pinot Noir, with the remaining 10% Chardonnay, and disgorged in July 2025 with three grams per liter dosage, Doyard’s 2021 Grand Cru Millésime Œil de Perdrix mingles notes of wild raspberry, orange peel and mirabelle plum with a rooibos-tinged top note. The palate is medium- to full-bodied, elegant and bright, with a crisp core of fruit and racy acidity, framed by dry extract and animated by a pillowy mousse. It stands in notable contrast to the richer, more full-bodied 2019 rendition.

Pinot Noir maceration, direct pressing and then fermented in oak barrels for the Pinot Noir. Malolactic fermentation is not carried out. Second fermentation in the bottle with a minimum ageing of 3 years and a final dosage of 3 g/l (Extra Brut).
