Description
In the heart of the Côte Chalonnaise, Domaine de Villaine embodies an austere and deeply respectful vision of the Burgundian vineyard. Far from the spectacle of the Grands Crus, Domaine De Villaine Bourgogne Côte Chalonnaise Les Clous Aimé is born of a quest for purity: to allow the grape to speak without artifice, to allow the soil to express itself without make-up. This cuvée comes from a 3.4 hectare plot in Bouzeron, where the Chardonnay vines, aged between 20 and 55 years, cling to clay and limestone soils that give tension and verticality to the wine.
Winemaking
Each plot used to make Domaine De Villaine Bourgogne Côte Chalonnaise Les Clous Aimé is vinified separately. After a gentle pressing in a pneumatic press, the must rests cold for 24 to 36 hours in stainless steel tanks. The wine is then transferred to large wooden vats, where fermentation and ageing take place over a period of 10 to 12 months. 80% of the wine is aged in these vats and 20% in barrels, seeking a balance between precision and complexity without overweight. The lees are removed only in case of reduction; the winemaking philosophy is minimalist, allowing the wine to refine naturally, without unnecessary intervention.
Taste
On the nose, Domaine De Villaine Bourgogne Côte Chalonnaise Les Clous Aimé displays a restrained and elegant profile: ripe lemon, grapefruit zest, green apple and a hint of white flower. In the background, a subtle chalky minerality, like wet stone after rain. On the palate, the texture is precise and enveloping, with a tense acidity that brings rhythm and energy. The mid-palate is filled with notes of lemon cream, raw almond and a slight salinity. The finish is long, straight, with a citrus and stony vibrancy that leaves a mark. A Chardonnay that does not seek to seduce immediately, but that conquers with its honesty and mineral pulse. Sober, authentic, essential.
