Disgorged with two grams per liter dosage in December 2020, the NV Extra-Brut Les Rendez-Vous de Billecart-Salmon No. 2 is based on the 2014 vintage, complemented by some 22% reserve wines from 2012, all vinified in stainless steel. Offering up aromas of citrus oil and crisp green orchard fruit, it's medium-bodied, bright and chiseled, with a pure core of fruit, tangy acids and a delicately chalky finish.

Description
The Billecart Salmon Les Rendez-Vous Nº2 champagne is an exquisite display of the Billecart Salmon house's winemaking expertise. This wine is a 100% Pinot Noir, sourced mainly from the historic terroirs of Ambonnay and Verzenay in the Montagne de Reims. These vineyards are ideally located with southern exposure, on deep chalk soils. The cuvée is from 2014, with 22% reserve wines from 2012. Vinification is done in cuvees, and the wine matures on lees in the bottle for secondary fermentation for 65 months, with a final dosage of 2 grams of sugar per litre.

Billecart Salmon Les Rendez-Vous Nº2 offers an intense and exquisite taste. On the nose, it offers an aromatic freedom with floral sensations, such as cherry blossom and violet, intertwined with notes of biscuit, hints of honey and raw butter. These aromas awaken the senses, leading to polished nuances ranging from fruit pulp to citrus zest.
On the palate, it has a generous and tactile texture, with an intense fruity flavour reminiscent of candied lemon paste, mandarin and liquorice. This wine provides a sensation of complete pleasure, with a mid-palate that extends towards a chalky, slightly spicy distinction. On the finish, it has a refreshing minerality with acidic accents of fresh raspberries.
