Description
Billecart-Salmon Extra Brut is a champagne made from Pinot Meunier, Pinot Noir and Chardonnay by the Billecart-Salmon winery in the Champagne region of France.
This is a champagne that combines three of the best grapes coming from the best vineyards in the heart of the Marne Valley.
The Billecart-Salmon vineyard uses some biodynamic principles and avoids the use of pesticides and herbicides.
Winemaking
The grapes are harvested by hand. The winemaking is traditional, the vinification process is done in vats with malolactic fermentation and the use of between 50 and 60% of reserve wines. The dosage is moderate with 8 grams of sugar per litre.
It is a champagne that rests for a minimum of 30 months in the marvellous underground cellars with 17th century walls.
Taste
Billecart-Salmon Extra Brut has a sparkling and crystalline blend. It is a champagne where complex and seductive floral and fruity aromas are further enhanced by the subtle charm of an herbal touch.
On the palate it has a lovely fruity flavour and a full, harmonious minerality resulting in a sensational, well-balanced finish and superb acidity.
