Description
André Beaufort Polisy Brut Millésime is the effervescent jewel that embodies the essence of champagne at its best. This wine is made from a careful selection of grapes, 80% Pinot Noir and 20% Chardonnay. Its production follows the principles of organic and biodynamic agriculture, respecting nature and the environment as much as possible.
Winemaking
The grapes are harvested by hand at the optimum moment of ripeness. After a first spontaneous fermentation with indigenous yeasts, Polisy Brut Millésime undergoes a second fermentation in the bottle and remains on its lees for 7 years before being disgorged by hand and the expedition liqueur added.
Taste
André Beaufort Polisy Brut Millésime is a ripe sparkling wine with a delicious aroma of stone and citrus fruits, combined with herbal and pastry notes. The palate is concentrated, unctuous and very elegant. A champagne with a velvety texture, balanced acidity and a long, lingering, chalky finish.
