The third vintage of the new white is the very young 2025 Llampuga Vinícola, produced with 50% Malvasía and 50% Premsal Blanc fermented in stainless steel with indigenous yeasts and bottled unoaked. It has 12.5% alcohol, a pH of 3.62 and 4.3 grams of acidity. The vines are worked organically, but the wine is still not certified. I tasted an unbottled sample, and those tend to be a little unstable; the nose can show deviation, but the palate is more what the wine is, which is very good in 2025, with the essence of the Mediterranean. This will be filtered, and sulfites will be added at bottling time; so, this is a little more 'technological' than the Motor Blanc, but the essence is the same. 6,000 bottles produced.

4 Kilos Llampuga Vinicola was born as a tribute to the moments of transition: when the summer retreats and the sea returns the llampuga, that fish that only appears in Mallorca for a few weeks. In this ephemeral and luminous spirit, Francesc Grimalt and Sergi Caballero decided to create a white wine that does not behave like a white wine. They made it from 50% Malvasía and 50% Prensal Blanc, native varieties that speak with an island voice, without ornamentation. They were not shy: they gave the wine structure, texture and an aromatic depth that is more reminiscent of a light red or a white with skins than a traditional white.

Winemaking

The grapes are harvested by hand and treated with minimal intervention. 4 Kilos Llampuga Vinicola has a deep golden colour and fine tannins, suggesting some degree of maceration with the skins. It is fermented in stainless steel tanks with indigenous yeasts, without barrel ageing or aggressive filtration, and bottled in April. The result is an honest, direct wine, without make-up, which conveys the minerality of the Mallorcan soil and the salt of the Mediterranean.

Taste

On the nose 4 Kilos Llampuga Vinicola unfolds slowly: ripe golden fruit (peach, apricot, yellow apple), dry herbal notes and an earthy, saline, almost hot stone background. There is no floral exuberance; instead, there is restraint, tension. The palate is full but precise: silky texture, sharp acidity and a slight bitter finish reminiscent of grapefruit zest and green almond. Fine tannins are perceptible, adding body and length. It is not an indulgent wine, but one of character: serious, dry, persistent and deeply gastronomic. Ideal for blue fish dishes, seafood rice dishes or preparations with aromatic herbs. A white wine that walks on the border of orange, with the soul of an island and the vocation of the sea.
