Description
Viña Almate La Olmera is a unique expression of natural viticulture, located in Bocos de Duero, Valladolid. This wine is a single varietal, composed of 100% Tinto Fino, a variety that has been planted on trellises since 1986 and is formed in double Cordon Royat. The La Olmera plot, located at an altitude of 756 metres, is cultivated without chemical products such as herbicides or pesticides, and the plants are not irrigated even in times of water stress. These environmentally friendly practices allow the harvests to clearly reflect the terroir and the particularities of each vintage.
Winemaking
The production of Viña Almate La Olmera begins with a manual harvest in the second week of October. The grapes are not destemmed and are vinified in stainless steel tanks with daily punch-downs, using indigenous yeasts from the vineyard. There is no correction or addition of any kind, and maceration lasts 15 days. Malolactic fermentation begins in French oak barrels for 20-30 days. Subsequently, the wine matures in French oak barrels for 12 months, without racking until bottling in order to maintain its purity and natural stability. Production is limited, with only 650 bottles.
Taste
Viña Almate La Olmera stands out for its spicy character and vanilla background. It has a deep cherry red colour and is very aromatic. On the palate, the spicy character is also perceived, accompanied by a balanced acidity. These characteristics make it ideal to accompany stewed meats, Valencian paella, rice with duck and game dishes.
