Free run fermented with indigenous yeasts and skin maceration for 1 month in concrete vats. Aged for 28 months in the same concrete tanks. Subsequently, it remains in the bottle for a total of 6 months before being marketed. Bottled unfined, unfiltered and slightly sulphited.
