Description
Tomás Postigo does not view wine as a recipe, but as a map: the more diverse the raw materials, the more precise the final picture. In his winery, there is a recurring theme that sums up this obsession with detail: the richness of a great wine lies in diversity; diversity of choices, textures and indigenous yeasts. And for this white wine, he made a rather uncompromising decision: to seek out ungrafted Verdejo vines in Nieva (Segovia) — vines that survive without grafting thanks to sandy, stony soils —and, furthermore, to age it with the ambition of a serious wine, even if that meant straying from the easy path. On this high, continental plateau, with harsh winters and dry summers, the grape ripens with vigour and retains its tension. The blend here is beyond debate: 100% Verdejo.
Production
In Tomás Postigo Verdejo Barrel-Fermented, the grapes undergo strict selection and are taken directly to new French oak barrels, where they ferment: there is no aromatic enhancement; the wood provides a framework, not a disguise. The wine then spends 12 months in new French oak barrels, with regular stirring to develop density, creaminess and depth without losing its backbone.
Taste
In Tomás Postigo Verdejo Barrel-Fermented, the nose is not that of an ‘easy’ Verdejo: first, ripe white fruits and an exotic hint (pear, mango) emerge, followed immediately by aniseed, fennel and that subtle vegetal note characteristic of the variety, enveloped by delicate spices and elegant toasted notes. On the palate, it is juicy and structured, with a creaminess developed on the lees that fills the mouth, yet with an acidity that cleanses and tightens the palate once more. The oak is noticeable, yes, but it is well integrated: more bakery and hazelnut than vanilla, more length than sweetness. It finishes with that noble bitterness of Verdejo Blanco that calls for food: oily fish, roast poultry, seafood rice dishes. A white wine with ambition and a bright future ahead.
