In Chorey-lès-Beaune, in the lower, more unassuming part of the Côte de Beaune, Tollot Beaut produces down-to-earth Burgundy – no fireworks, no grand cru pretensions. The family has been cultivating vines here since the late 19th century and was among the first in the area to bottle wine under their own name – a bold decision at a time when many preferred to sell their wine to merchants. That family tenacity lives on: to showcase Chorey as it is, with its clay-limestone soils, cool climate, crisp red fruit and that refined rusticity that ensures the Pinot Noir feels authentic rather than contrived. Tollot Beaut Chorey-Beaune is 100% Pinot Noir, hailing from a discreet yet quintessentially Burgundian appellation, where elegance stems not from lightness but from precision.
Winemaking
Tollot Beaut Chorey-Les-Beaune is harvested by hand, with the grapes selected on arrival at the winery. The winemaking approach is classic and minimally interventionist, seeking to preserve the purity of the Pinot Noir and the village’s identity. Fermentation takes place with moderate extraction, avoiding over-ripeness or excessive concentration. The wine is then transferred to Burgundian French oak barrels, where it is aged for approximately 10 to 12 months, depending on the vintage, with the oak always taking a back seat. The aim is not to achieve obvious vanilla or toasty notes, but rather a fine polishing of the tannins, a slow development of the wine’s character, and a subtle spicy depth before bottling.
Taste
Tollot Beaut Chorey-Les-Beaune boasts a vivid, brilliant ruby colour, with that quintessentially Burgundian transparency that hints at finesse even before the first sip. The nose captivates with red cherry, raspberry and delicate redcurrant, enveloped in a base of damp earth, dry leaves and limestone. Gradually, a subtle floral nuance and a barely perceptible spicy note also emerge, lending depth without distracting from its core character. Nothing heavy or cloying, just fresh fruit, vigour and a very clear sense of authenticity.
On the palate, Tollot Beaut Chorey-Les-Beaune is juicy from the outset, with tart cherry, fresh raspberry, fine tannins and an acidity that cleanses and elongates the whole with great naturalness. There is tension, but no dureza; there is freshness, but also a delicately earthy texture that gives it character. Hints of gentle spice, undergrowth, a hint of fine pepper and well-integrated oak emerge, always discreet. The finish is dry, flavourful and mineral, with that rustic charm of Chorey-lès-Beaune that makes it as drinkable as it is recognisable: a sincere, precise and by no means simple Burgundy.
