Direct pressing, free run fermented with indigenous yeasts, malolactic fermentation and ageing on lees for 9 months in French oak barrels and demi-muids (500 litres). Second fermentation in bottle with a minimum ageing of 18 months, without final dosage (Brut Nature), disgorged by hand, unfiltered and without added sulphites.
Description
In the extreme south of the Côte des Bar, where the soil is a mosaic of Kimmeridgian marl, ancient limestone and fossil layers that seem to hold the murmur of a prehistoric sea, is born one of the most sincere and vibrant Champagnes of the whole region: Ruppert-Leroy Martin Fontaine Chardonnay.
The winery is run by Emmanuel and Bénédicte Ruppert, a young couple who inherited the family vineyards and decided to break the rules of the game: they gave up selling grapes to the big maisons and bet everything on making their own Champagne, no additives, no make-up, just wine and truth.
The Ruppert-Leroy Martin Fontaine vineyard, where this blanc de blancs comes from, is cultivated biodynamically with an almost religious devotion to natural balance. There are no pesticides, no chemical intervention: there are sheep grazing between the rows, there are plant infusions, there are hands instead of machines. And there is a brave decision: not to correct anything, not to make up anything, to let the terroir - those old chalky stones, that cool climate of the Aube, that constant breeze - speak for itself. 100%Chardonnay, but not the tamed, creamy Chardonnay that many expect: here it is sharp, electric, mineral, rebellious.
Winemaking
Each bunch is picked by hand, in small crates, at the right moment - neither before nor after. The grapes go through a gentle vertical press and the must ferments spontaneously with indigenous yeasts in used foudres and demi-muids, where it also undergoes malolactic fer mentation without forcing it. There is no filtration, no fining, no dosage. Martin Fontaine remains on its lees until the second fermentation in the bottle, which is carried out naturally, without the addition of sugar or external yeasts. The ageing on the lees is long, silent, deep - at least 24 months in the bottle -no make-up, no concessions. Each bottle is disgorged by hand, with nothing added. Brut Nature in the purest sense of the word.
Taste
The nose of Ruppert-Leroy Martin Fontaine is precise and restrained, almost austere at first. Damp chalk, lemon zest, a flash of green apple peel. With air, notes of fresh walnut, white flower, and a shy, raw almond. Nothing is exuberant, everything is insinuation, fine lines, restrained tension. The attack on the palate is like a dry lightning bolt that splits the tongue in two: citric, saline, with a firm, almost sharp texture, but with a vital energy that thrills. The bubbles are very fine, perfectly integrated, more of a mineral caress than a festive effervescence. The finish is long, vertical, with a saline persistence reminiscent of oyster shell and cold iron. Ruppert-Leroy Martin Fontaine does not seek to please, but to reveal: the nakedness of the soil, the strength of the place, the decision not to intervene. Intransigent, honest, radical. For those who seek the soul of the terroir in every sip.
