Second fermentation in bottle with a minimum ageing of 18 months, without final dosage (Brut Nature), disgorged by hand, unfiltered and without added sulphites.
Description
There was a time when Emmanuel and Bénédicte Ruppert decided to leave behind the unwritten rules of conventional Champagne. Their estate, Ruppert Leroy, located in Essoyes, in the Aube - geographically and spiritually very close to the Jura- was a family vineyard that for years sold its grapes to the big maisons. But in 2010, they made a radical decision: to make wine on their own, without make-up, without corrections or artifice. They turned their land into a declaration of principles: certified biodynamic viticulture, separately vinified plots, indigenous yeasts and minimal intervention.
Ruppert-Leroy Fosse Grely, the name of a specific plot planted with Pinot Noir and Chardonnay, is the wine with which they made their debut. The vines, rooted in deep clay-limestone soils, drink from a living soil and a microclimate that combines the coolness of the nearby forest with the sunny amplitude of the Aube. Here, the modest altitude and the northern breeze slow down ripening, allowing a tense, sharp, pure expression. The terroir speaks without filter.
Winemaking
The grapes are harvested by hand in small crates, fermented with wild yeasts in used vats and barrels, and the wine remains in contact with its lees until bottling without filtration or fining. The second fermentation is carried out according to the traditional method, but without the addition of expedition liqueur: this is a brut nature Champagne, with no added sugars, no make-up, aged for a minimum of 18 to 24 months in the bottle before disgorgement. Each bottle is disgorged by hand, batch by batch.
Fosse-Grely does not seek to please everyone, but only a few. Its ageing on the lees gives it volume and texture, but what is essential here is vibrancy, verticality. There are no concessions: what goes into the grape is what comes out in the glass.
Taste
In a freshly poured glass, Ruppert Leroy Fosse Grely is restrained energy. A saline, austere nose, with hints of wet chalk, freshly cut green apple and lime zest. After a few minutes of airing, notes of very subtle hazelnut butter, hay infusion, fine yeast and that almost umami character that only great sparkling wines without dosage manage to achieve. The palate is sharp, direct, fat-free, but with a savoury tension that fills the palate without weighing it down. The carbonic is very fine, almost creamy, elevating a mineral structure more reminiscent of a great Chablis than a classic Champagne.
The finish is long, saline, with notes of pink grapefruit, yuzu zest and a very slight smoky echo, reminiscent of struck stone. It is a wine that vibrates, that you do not forget. A Champagne that you drink with your head held high, that demands attention and rewards you with a brutal authenticity. Ideal for those who are looking for a sparkling wine of extreme purity, without garnish or concessions. A Champagne that feels more like a landscape than a drink.
