The 2016 Brut Blanc de Blancs Cuvée Spéciale Les Chétillons is showing beautifully, wafting from the glass with aromas of yellow orchard fruit, crisp peaches, freshly baked bread, warm biscuits and hazelnuts. Medium to full-bodied, pillowy and textural, it's layered, racy and fine-boned, with a bright spine of acidity, good concentration and a chalky finish. This comparatively approachable Les Chétillons was disgorged in November 2022 with four grams per liter dosage.

Description
In the heart of the Côte des Blancs, in Le Mesnil-sur-Oger, the Pierre Péters family has forged its identity around Chardonnay and the purest expression of the terroir. Les Chétillons is born from three old plots settled on the finest Grand Cru chalk, deep vines that have learned to dialogue with the cold, the wind and the precise light of Champagne. The philosophy here is clear: one vineyard, one vintage, one truth. In a region dominated by blending, it was a brave decision to opt for a plot-based, millimetric cuvée. 100% Chardonnay, only in the years capable of clearly reflecting the character of the terroir, this wine is the direct voice of the white rock of Mesnil.
The cool climate and slow maturations imprint a straightforward tension and vibrant salinity that define the style. There are no concessions to exuberance; there is precision, verticality and a minerality that cuts like an edge.
Winemaking
At Pierre Péters Les Chétillons Blanc de Blancs Grand Cru, the grapes are harvested by strict selection. The grapes are pressed whole to preserve purity and finesse. Fermentation is mainly carried out in stainless steel, aiming for clarity and aromatic definition. After alcoholic fermentation and, depending on the vintage, malolactic fermentation, the cuvée is bottled for secondary fermentation.
Les Chétillons ages for at least 72 months on the lees, gaining depth, texture and complexity without losing tension. The dosage is minimal, between 3.5 and 4.5 g/l, just an adjustment that does not sweeten but refines. After disgorging, it rests for an additional year before release. Time here is not waiting, it is precision.
Taste
On the nose Pierre Péters Les Chétillons Blanc de Blancs Grand Cru is vertical and austere. Damp chalk, chalky dust and an echo of oyster shell appear. Then fine layers of lemon, lime and white grapefruit emerge, always in a dry and defined key. With air, notes of green apple and a slight hint of cold brioche complete the ensemble. On the palate it is a ray of pure acidity. The bubbles are very fine, perfectly integrated. The structure is slender but intense, supported by a mineral column that crosses the palate. The fruit remains contained, almost in the background, while the salinity and chalky sensation dominate the centre of the palate. The finish is long, saline and vibrant.
A Blanc de Blancs Grand Cru for purists, deep and precise, where the chalk speaks louder than the fruit.
