The NV Blanc de Blancs Grand Cru Extra Brut is entirely from the 2014 vintage and was sourced in four parcels of the Côte des Blancs. Opening with potted ginger and white flowers on the clear, fresh, precise and chalky nose, this is a pure, fresh, elegant, beautifully dry and chalky grand cru with an expressive, stimulating iodine-inflected finish that reveals a persistent structure and freshness. This is a damned serious and chalky Blanc de Blancs that was disgorged in January 2018 with just two grams of dosage. Tasted at the domaine in April 2018.

Description
In the heart of the Côte des Blancs, in Le Mesnil-sur-Oger, the Pierre Péters family has been devoted to Chardonnay for generations. They do not simply make Champagne; they interpret the chalk. This cuvée Extra Brut Blanc de Blancs Grand Cru is made from four Grand Cru parcels - Le Mesnil, Avize, Cramant and Oger - selected for their tension and purity. To this is added around 20% of the Perpetual Reserve, begun in the 1980s, which adds historical depth without diluting the verticality.
The white chalk soils, capable of retaining water and reflecting light, allow for slow ripening and vibrant acidity. The cool climate lends nerve and definition. This Blanc de Blancs is 100% Chardonnay, but far from any opulence; it is a version sculpted in stone, straight and mineral.
Winemaking
In Pierre Péters Extra Brut Blanc de Blancs Grand Cru, the manual harvest respects each parcel and its exact moment of balance. After gentle pressing, the must ferments in stainless steel to preserve purity and aromatic clarity. There is no wood: transparency is the message.
The second fermentation in the bottle is followed by a minimum of 36 months on the lees. This prolonged rest refines the bubbles and provides a creamy texture that balances the wine's natural tension. The precise disgorgement culminates in a dosage of just 2 g/L, a true declaration of principles where there are no concessions, only precision, thus consolidating its Extra Brut profile. The result is a Champagne of saline energy, firm structure and chalky definition.
Taste
In the glass Pierre Péters Extra Brut Blanc de Blancs Grand Cru is restrained, almost austere at first. Then fresh lemon, lime and white grapefruit emerge, along with green apple and a faint hint of pear. Everything is enveloped in a clear sense of wet chalk and crushed stone, the unmistakable hallmark of the Côte des Blancs. The palate is incisive and vertical. The bubbles are very fine, integrated like chalk dust. The acidity is electric but harmonious thanks to the work on the lees. Subtle hints of brioche, fresh almonds and toast appear, always in the background.
The finish is long, dry and saline, with a crystalline purity that cleanses the palate. This is a Blanc de Blancs for lovers of tension and minerality, a Champagne that seduces by precision rather than volume, ideal with oysters and seafood, where its chalky edge finds its perfect setting.
