Château Pichon Baron’s Pauillac stems from a quintessentially Bordeaux concept: to bring the character of a great estate to a more accessible expression, without compromising the terroir from which it originates. Produced by the team at Château Pichon Baron, this wine draws its character from young vineyards at Tour Pibran and Pichon Baron, on calcareous clay and gravel soils in the heart of Pauillac, where the proximity of the estuary and the poor drainage of the soil shape reds with vigour, class and depth. Here, there are no concessions to artificial embellishment. There is precision, respect for the land and a clear desire to showcase the authentic character of the appellation. The blend comprises Merlot (80 per cent) and Cabernet Sauvignon (20 per cent), a combination that seeks fruit, structure and a straightforward elegance.

Winemaking

The Merlot was harvested between 12 and 22 September, and the Cabernet Sauvignon from 23 September to 4 October. Once the grapes arrive at the winery, the fruit is sorted and vinified to the same exacting standards as the estate’s other wines. Fermentation and extraction are geared towards preserving the fruit’s character and the Pauillac identity of Château Pichon Baron, avoiding excesses and prioritising a polished texture. The wine is then aged for 12 months in one-year-old barrels, a wise choice: it adds complexity, spice and depth, without masking the natural vigour of the vintage or making the wine too harsh with overpowering oak.

Taste

In the glass, Château Pichon Baron’s Pauillac opens with crisp, fresh and precise red and black fruit, leaning more towards ripe cherry, dark strawberry and redcurrant than towards overripeness. Then comes the serious business: black pepper, liquorice, a floral echo of rose and peony, and that classic hint of bitter cocoa and fine oak that recalls the estate’s pedigree. On the palate, it enters gently, but immediately stretches out and takes on verticality. There is roundness, certainly, but also a saline, chalky mineral backbone that tightens the mid-palate and lengthens the wine. The tannins are present, firm and fine-grained, marking a finish with muscle, freshness and a distinctly Bordeaux character. A Pauillac that is approachable in its youth, yet with sufficient structure to develop complexity in the bottle.
