Description
The Neolític wine is an example that marked the beginning of a new era at the Parés Baltá winery, as it is made from an ancestral grape variety that had been forgotten. The Sumoll grape was recovered in 2014 and since 2017 it has been processed to produce a unique wine, Neolític.
Winemaking
The cultivation techniques of the Sumoll grape, for the production of this wine, also follow the philosophy of the Parés Baltá winery, ensuring that agriculture is carried out under ecological and biodynamic processes.
After the harvesting phase, which is carried out manually to ensure the optimum ripening of the fruit, the must is extracted and then fermented in stainless steel barrels. It is then macerated for 9 days before being vinified in 60-litre barrels. Finally, it is bottled without the addition of sulphites.
Taste
The Parés Baltà Neolític wine is characterised by its intense and imposing aromas of red fruits and subtle floral notes. As for its flavour, we can say that it is energetic and refreshing, leaving a long lingering aftertaste and a very particular acidity on the palate.
In addition, you will notice the presence of tannins in each sip, which adds a special level of freshness.
