Overnight skin soaking with destemmed and crushed grapes. Fermented with indigenous yeasts with light residual sugar at the end and aged in demijohns. Lightly filtered.
Description
Panevino Bukanti is an authentic and unique expression of the terroir of Sardinia, Italy. This sparkling rosé wine comes from vineyards that have an average age of 25 years, rooted in limestone soils. The grape varieties that make up this wine are Cannonau and Sangiovese.
Winemaking
The vinification process is particularly interesting. After a day of maceration, the grapes are pressed and partially fermented. The wine is then bottled with 20 grams of residual sugar and sealed with a crown to refermentate naturally in the bottle. This production method is known as petillant naturel, and Gianmarco, the creator of Panevino Bukanti, is one of the pioneers in Italy in making wines in this style. In fact, "Bukanti" is the first petillant naturel that Gianmarco has produced in almost a decade.
