Description
In the heart of the Ribera del Duero, where the vines breathe the cold air of the Altura and the roots cling to poor limestone and clay soils, a wine is born that does not respond to logic, but to a longing: Pago de los Capellanes Un Sueño En Las Alturas (Pago de los Capellanes A Dream In The Heights). This wine is the most intimate and daring expression of the Pago de los Capellanes team, a house that, since its beginnings, has defied the orthodoxy of the area to seek purity, freshness and elegance in a territory dominated by power.
This project was born from the almost quixotic desire to plant vines in Fuentenebro, the highest point of the appellation, at more than 1,000 metres above sea level. An extreme altitude where others saw difficulties, they saw poetry. Tempranillo vines grown in soils of quartz, granite and red mica, with a radical climate that oscillates between cold nights and sunny days. There, in this almost hostile environment, they discovered an unexpected profile of the variety: nerve, verticality and vibrant tension. They gambled on the difficult when they could have taken the safe path. But rare beauty always requires risk.
Winemaking
At Pago de los Capellanes Un Sueño En Las Alturas the grapes are harvested by hand in small crates, sorted berry by berry on the table. Each cluster is treated with the respect deserved by someone who has survived such an extreme environment. Fermentation is spontaneous, with indigenous yeasts, in small stainless steel and concrete tanks.
Ageing is carried out for 12 months in fine-grained French oak barrels, but without the wood playing a leading role: the aim is not to dress the wine, but to let it speak. Afterwards, a brief rest in the bottle so that the pieces fit together and the wine finds its balance before being released into the world.
Taste
The first contact with Pago de los Capellanes Un Sueño En Las Alturas is electric: a whisper of freshness, an entry that doesn't knock, but caresses with precision. The fruit shows itself in its most restrained form: tart cherry, pomegranate, a subtle note of wild blueberry. But don't expect exuberance: this Tempranillo speaks softly, with a mineral accent reminiscent of wet stone, chalk and graphite.
On the nose, it hints rather than reveals: dried petals, black tea, a trace of rosemary and thyme that evokes the high, sunny slopes of Fuentenebro. There is no make-up, just raw, untouched elegance. The tannin is fine but present, structured like a net that supports the sharp acidity. The finish is long, deep, almost meditative, leaving a saline, austere and delicious trail that invites another sip, and then another.
Un Sueño en las Altura is not a complacent wine. It is a declarationof principles. A Tempranillo out of the mould, breathing altitude, tension and precision. For those who seek emotion beyond strength, a dream that does not come down to earth, because it was made to stay in the Altura.
