Description
At the top of Subirats, surrounded by pine forests, holm oaks and aromatic plants, is the natural amphitheatre of Les Flandes. There, on vertical limestone rock walls dating back 16 million years, Llopart Original 1887 is born, a sparkling wine that honours the first bottle made by the family in 1887. More than a tribute, this wine is an act of fidelity to the land and to time.
The 2006 vintage, launched in 2012, marked the beginning of this unique project, driven by the desire to perpetuate the artisanal viticulture of the 19th century. To this end, historic vines planted between 1934 and 1981 were chosen: Ticu (1935, Montònega), Pere de Can Ros (1934 and 1956, Xarel.lo and Macabeu), and Isidoro (1981, Xarel.lo). Together, they form a mosaic of old vines that, due to their low yields, offer grapes of the highest concentration.
The terroir is extreme and privileged. With an altitude of 380 metres and fossilised limestone soils from the Miocene, the vineyards of Les Flandes produce wines with an intense mineral expression, marked by freshness, tension and austerity. The surrounding biodiversity - pine, holm oak, fennel, rosemary - imbues the character of the wine with unique nuances.
Winemaking
The grapes are harvested by hand and whole grapes are pressed to preserve their aromatic purity. The musts ferment at a low temperature to preserve the freshest and most delicate profile. At the beginning of the following year, the base wine is blended and the second fermentation begins in the bottle. The Llopart Original 1887 is aged for more than 120 months in semi-darkness and at a constant temperature.
Once this long dormancy is complete, the bottles of Llopart Original 1887 are placed on racks and the wine is manually racked, bottle by bottle. Disgorging is carried out without the addition of expedition liqueur: a pure and direct Brut Nature.
Taste
On the nose, Llopart Original 1887 displays aromas of ripe white fruit, dried citrus peel, toasted bread and a background of limestone. With air, it reveals itself to be more complex: dried flowers, raw almonds, pine resin and light balsamic notes.
On the palate, Llopart Original 1887 is dry, vertical, with fine, creamy bubbles. Taut and deep, with notes of bread crust, marked salinity, dried stone fruit and a long finish with echoes of dried honey and Mediterranean herbs. It is a wine without ornamentation, sincere, that does not seek to impress but to move those who know how to listen to its silence.
