Description
Jules Bonnet Rosé de Noirs Extra Brut 1er Cru is a rosé champagne that has been made exclusively with Pinot Noir under the champagne appellation.
The grapes come from 4 vineyards from the Verzenay terroirs, classified as Grand cru and 2 vineyard plots from the Chamery terroirs, classified as Premier cru.
These vineyards are approximately 55 years old on average and were planted on a sandy-clay soil in shallow chalk.
Winemaking
After manual harvesting, the wine is pressed within 4 hours after the harvest and blended with 7% hillside red champagne. The first fermentation takes place in 228-litre oak barrels on fine lees, and ageing lasts 9 months before bottling.
The second fermentation takes place in bottle with a dosage between 0 and 4 g/L. The wine is aged in the bottle for at least 5 more years to develop the aromatic complexity of this wine. No filtration and minimal use of sulphites.
Taste
Jules Bonnet Rosé de Noirs Extra Brut 1er Cru has spicy, fruity and floral aromas. The palate is frank but not aggressive, very fresh acidity, low tannins and the finish is long and persistent with a mineral texture.
A light and vibrant wine
This rosé champagne reflects the potential of the northern mountain terroirs of Reims with richness, tension and great ageing potential.
On the gastronomic scene, it is perfect at anniversary dinners as an accompaniment to full meals with fish and seafood. It is also excellent as an aperitif with foie gras or truffle toast or at the table with cheeses.
