Description
Giovanni Rosso Barolo Cerretta comes from the sunny slopes of Serralunga d'Alba, specifically from the Cerretta vineyard, one of the most prestigious areas of Barolo. It is made from 100% Nebbiolo grapes, the classic variety of the region, and the vines have an eastern and south-eastern exposure, planted between 1984 and 2000.
Winemaking
Fermentation takes place in cement tanks in contact with the skins for approximately 25 days, with daily pumping over and a technique called délestage in the middle of the process. Ageing takes place in 25 and 50 hl French oak barrels for a period varying between 18 and 36 months depending on the vintage.
Taste
Giovanni Rosso Barolo Cerretta is distinguished by an aromatic nose with notes of white pepper, violets and rose petals, adding complexity to the bouquet. The palate is powerful, yet balanced with a smooth, silky texture. The tannins are enveloping and well-structured, giving it great ageing potential. The predominant flavours include black cherry, dried blackberry and spices, with a touch of liquorice. This wine harmonises well with meat dishes such as beef ribs or sirloin steak with mushrooms, and is perfect to serve between 16-17 °C.
