Description
François Cotat, one of Sancerre's most renowned winemakers, produces La Grande Côte wine from a one-hectare plot located in the commune of Amigny. This vineyard is 100% Sauvignon Blanc, a variety that expresses itself exceptionally well in this terroir. The Kimmeridgian limestone soils shared with the best vineyards of Chablis give the wine a remarkable mineral structure. The south-facing orientation of the vineyard ensures optimal ripening of the grapes, bringing richness to the wine.
The vineyard, located on a steep hillside with an average age of the vines of 20 years (although some are up to 60 years old), is cultivated by hand, following traditional methods.
Winemaking
Cotat harvests the grapes late in order to obtain a more complete ripening of the grapes. The grapes are pressed with an old wooden vertical press. Fermentation is carried out with indigenous yeasts in old demi-muids, and the wine is aged in used oak barrels, without fining or filtration. This process includes bottling according to the lunar cycles, which shows the winemaker's respect for the natural rhythms of the land.
Taste
François Cotat La Grande Côte stands out for its intense and vibrant profile. On the nose, it displays aromas of stone fruits, such as peach and apricot, complemented by citrus notes and a subtle smoky touch. The palate is precise and energetic, with flavours of poached pear, quince jelly and a hint of aniseed. Its balanced acidity and rich but sharp texture make it a wine of great depth and cellaring capacity. It is ideal with fresh goat cheeses, white meats or even Asian cuisine.
This wine reflects François Cotat's respect for traditional winemaking techniques and the uniqueness of his vineyard, offering a unique Sancerre that evolves beautifully over time.
