A new cuvée from Egly makes its debut in the NV Brut Vignes de Bisseuil, a blend of 70% Chardonnay and the balance equal parts Pinot Meunier and Pinot Noir, all vinified in oak. This first release, disgorged in March 2021 with three grams dosage, is based on the 2016 vintage. Offering up aromas of crisp orchard fruit, lemon oil, mint, white flowers and almonds, it's medium to full-bodied, vinous and chiseled, its enveloping core of fruit girdled by bright acids and chalky structure. Concluding with a long, saline finish, it's a superb addition to the range that nips at the heels of Egly's NV Brut Grand Cru.

Fermented with indigenous yeasts in French oak barrels (10% new). Addition of 20% of reserve wines for the second fermentation in bottle with a minimum ageing of 48 months and a final dosage of 2.5 g/l (Extra Brut).
Description
Egly-Ouriet Premier Cru Les Vignes de Bisseuil is an exceptional champagne that reflects the expertise and tradition of the Maison Egly-Ouriet. This wine is mainly composed of Chardonnay (80%), complemented with Pinot Noir (10%) and Meunier (10%).
Winemaking
The grapes are harvested from our own vineyards near the village of Bisseuil, in the Vallée de la Marne region. Fermentation is carried out naturally, using only indigenous yeasts, which underlines the authenticity and unique character of this champagne.
The ageing of this wine is a carefully controlled process. Each bottle spends at least three years in the cellar before release, allowing the wine to develop greater complexity, ageing potential and a more authentic expression of terroir. This meticulous approach to ageing is complemented by a minimal dosage of only 2 g/l, highlighting the purity and quality of the wine.
Taste
Egly-Ouriet Premier Cru Les Vignes de Bisseuil offers a unique sensory experience. Its colour is a light and bright golden, inviting you to discover its complex aromatic layers. On the nose, notes of yellow fruits such as apple and pear, intertwined with citrus nuances. Aromas of pastries, such as fresh croissant and frangipane, add to the olfactory richness, followed by more ethereal hints of flowers, lime, acacia honey, aniseed and almond.
On the palate, this champagne is a perfect balance between purity and minerality, with juicy fruit flesh making it exceptionally balanced. The finish is long and saline, leaving a lasting and pleasant impression. This wine is ideal to enjoy as an aperitif or to accompany delicate dishes such as trout cannelloni with light saffron cream or pan-fried goose foie gras.
