Description

Ever since Jorge Monzón and Isabel Rodero founded Dominio del Águila in La Aguilera, in the heart of Ribera del Duero, their commitment has been clear: to make wines that speak of the soil, the climate and the weather. Trained in Burgundy and with experience in houses such as Vega Sicilia and Romanée-Conti, Jorge returned to his homeland to recover forgotten vines, many more than 80 years old, planted on poor limestone soils at an altitude of over 900 metres above sea level. Thus Dominio del Águila Vino Fino de Paraje Calizo was born, an austere and elegant white wine, made with Albillo Mayor from a place where the rock rules and the extreme climate sharpens the acidity. A wine that does not follow trends, but rather intuition and territory.

Winemaking

The grapes for Dominio del Águila Vino Fino de Paraje Calizo are harvested by hand and transported in small boxes. Fermentation takes place spontaneously, with indigenous yeasts, in new and used French oak barrels. Subsequently, the wine is left for 20 months on its fine lees, without fining or filtering. This long resting period adds complexity, structure and depth, but without detracting from its freshness. The wood is perfectly integrated, acting more as a channel than a mask.

Taste

Pale golden in colour, clean and bright, Dominio del Águila Vino Fino de Paraje Calizo presents itself with a serene and precise sensory expression. The nose displays subtle but profound complexity: ripe white fruit, candied citrus, dried flowers and a strong mineral imprint, like wet gypsum or broken limestone. The palate is taut, dry, saline and precise, with an acidity that supports its structure like a chalky skeleton. It passes elegantly through the palate, leaving sensations of apple skin, raw almond and a long finish with echoes of dried herbs and wet stone. Dominio del Águila Vino Fino de Paraje Calizo does not seek to please everyone, but it will appeal to those who understand the beauty of the essential, the pure and the mineral. A deep white, without make-up, that reflects the greatness of a raw and uncompromising terroir.
