There is great purity and freshness in the 2021s, and the eponymous 2021 Dominio de Atauta is no exception. Produced with a selection from their best vineyards in the Atauta Valley, it is complex and has depth, good ripeness, 14.5% alcohol and a pH of 3.63 and 5.05 grams of acidity. They have 25 different terroirs, and this blend comes with complexity, power and elegance, reflecting the conditions of the place and the vintage, with added freshness. It fermented in 5,000-liter oak vats with indigenous yeasts and matured for 13months in French oak barrels, 15% of them new, followed by another four months in oak vats to achieve a better stabilization of the wine. 2021 delivered a good crop, and they produced 58,494 bottles and 1,260 magnums. This is among the finest vintages for the cuvée. It was bottled in June 2023.

Description
Dominio de Atauta is a reflection of the soul of the Atauta Valley, located in the province of Soria, within the prestigious D.O. Ribera del Duero. This winery, founded in 2000, has managed to capture the essence of its pre-phylloxera vineyards, some of which are between 130 and 190 years old. These vineyards, distributed in more than 25 terroirs at altitudes of between 940 and 1,010 metres, grow in soils of calcareous sands and pebbles on limestone bedrock, which gives the wine a marked minerality.
Winemaking
Made from 100% Tinto Fino grapes, Dominio de Atauta stands out for its careful vinification process, which includes separate fermentations by terroirs in wooden vats and concrete tanks. The ageing, 14 months in French oak barrels (with only 15% new wood), and another 4 months in large oak vats, gives the wine complexity and balance.
Taste
Dominio de Atauta has an attractive, vibrant cherry red colour with violet hues. On the nose, it displays a complex palette of red and black fruits, with hints of aromatic herbs and a characteristic chalky background, the result of the chalky soils. On the palate, there is a remarkable elegance; its mineral character blends with fine tannins and fresh acidity, offering a long, enveloping finish.
