Description
Domaine de L'Ecu Invictus was born in the Atlantic heart of the Loire, where the granite emerges under poor soils and the cool climate marks the pulse of maturation, as a declaration of principles. At Domaine de l'Ecú, organic viticulture has been practised since 1975 and Demeter-certified biodynamic viticulture since 1998, not as a commercial argument but as a deep conviction. This micro-plot of 0.8 hectares facing south-east, planted entirely with Cabernet Franc, is worked by hand with yields limited to around 30 hl/ha. Only 1,157 bottles saw the light of day. The most audacious decision: to vinify without added sulphur, trusting fully in the purity of the grapes and the precision of the work in the cellar. Invictus is absolute fidelity to the granitic soil of the Loire Valley.
Winemaking
The grapes are harvested entirely by hand. The grapes enter by gravity, without pumping, preserving their integrity. Destemming is also carried out by hand, avoiding any mechanical aggression. Fermentation is carried out exclusively with indigenous yeasts and the wine spends eight months macerating in amphorae. This container allows for a gentle micro-oxygenation without adding external aromas, refining the texture without masking the character.
At Domaine de l'Ecu Invictus there is no fining or filtration. No sulphur is added (total SO₂ <15 mg/L). Everything requires maximum precision and cleanliness. Ageing in amphorae moulds the tannins delicately, respecting the primary energy of the Cabernet Franc and the mineral vibrancy of the granite.
Taste
Domaine de l'Ecu Invictus displays a deep, enveloping nose. Wild blackberry and forest strawberry dominate the start, followed by a menthol nuance and subtle notes of bitter cocoa and camphor that steer it away from any conventional profile. There is no exuberance; there is tension and definition.
The palate is straight, crystalline and fresh. The acidity, very aerial, structures the whole with surgical precision. The tannins, still firm, are tight but moderate, surprisingly fine for such a long maceration. The mineral sensation is palpable, almost tactile.
The finish is long, spicy and pure, with a return of fresh red fruit and an elegant earthy echo. A Cabernet Franc that defies cliché: lean, precise and uncompromising.
