Description
The soil here is very thin and therefore the bushes that produce the grapes must struggle to establish themselves between the rocks. This situation results in what many claim to be one of the best wines of Saint-Aubin.
The name is composed of two relevant elements, Les Meurgers, which are small walls built on the rocks that were removed from the site to plant the vines, and Dents de Chien, which is interpreted as dog's teeth, and refers to the white triangular rocks located in the vineyard.
Winemaking
Harvesting is entirely manual and is done in crates to protect the fruit. The verification process is not very interventionist in order to obtain pure wines with fruity notes.
The preparation of this wine is carried out in the most artisanal way possible, without resorting to yeasts or other inputs in the cellar, i.e. a process of viticulture is carried out as cleanly as possible. Once stabilised, the wines are bottled and can compete in finesse with the best wines of Burgundy.
Taste
This wine is characterised by its fruity and aromatic structure, with a fresh and elegant style, which has notes of citrus fruits offering a touch of acidity. In the mouth it has an extensive and rich flavour.
