Description
De Sousa Cuvée des Caudalies Grand Cru Brut Rosé is a sublime expression of winemaking that stands out for its composition and elaboration. This wine is the result of a carefully balanced blend of 90% Chardonnay and 10% Pinot Noir, sourced from vineyards located in the prestigious Champagne region, specifically in Côte des Blancs and Montagne de Reims. The vineyards, characterised by a 100% chalky soil, have an average age of over 60 years, which contributes to the complexity and depth of the wine's flavours.
Winemaking
Vinification is carried out in 100% oak barrels, which gives the wine woody and toasted notes. The Chardonnay is fermented in small barrels of 2 to 8 wines for 6 months, with regular pumping over to bring roundness and elegance. On the other hand, the Pinot Noir is kept for a year in barrels of 5 wines, strengthening its vigour. This barrel-ageing process is key to the wine's aromatic and taste profile. In addition, organic and biodynamic agriculture is practised, reflecting a commitment to sustainability and quality.

De Sousa Cuvée des Caudalies Grand Cru Brut Rosé offers an exceptional sensory experience. It is characterised by finesse and subtle aromas of fresh red fruits such as raspberry, cherry and kirsch. In addition, buttery and toasted notes can be appreciated as a result of its ageing in oak barrels. Its palate is an aromatic reflection of its bouquet, balanced with the aromas of small red fruits provided by the Pinot Noir. With a dosage of 3 gr/L, this wine presents a perfect balance between sweetness and acidity, making it ideal for pairing with oysters, veal, pigeon and red fruit desserts such as strawberry. Its ageing potential varies between 8 and 15 years, and it is recommended to be served at a temperature of 8-10°C to fully enjoy its qualities.
