The more exotic 2021 A Priori was produced with a blend of Macabeo, Chardonnay, Riesling and Gewürztraminer from his organic vineyards. It was bottled at 12.5% alcohol, with 5.9 grams of acidity and 3.3 grams of residual sugar, making it gentle and balanced. Young and energetic, it's a fun sparkling wine with more weight and complexity this year. 12,000 bottles produced. It was disgorged in October 2024 after 32 months with lees.

Description
In the heart of the Penedès region, where the Mediterranean breezes blow through vines grown organically on chalky soils, Colet A Priori Brut is born, a daring and precise expression of the classic sparkling wine. A meticulous winemaker with a restless spirit, Sergi Colet decided to break the mould with this unconventional blend of Macabeo, Chardonnay, Riesling and Gewürztraminer. His vision: a sparkling wine that respects the traditional method but speaks with its own voice, revealing layers of complexity without sacrificing freshness.
Winemaking
The grapes for Colet A Priori Brut are harvested separately at their optimum point, fermented in stainless steel to preserve the purity of each variety and then blended with surgical precision. After tirage, the wine rests for 32 months on its lees in the bottle, refining texture and bubbles, and is disgorged in October.
Taste
In the glass, Colet A Priori Brut has a pale yellow colour and fine bubbles. On the nose, it displays a fresh and expressive aromatic range: citrus fruits such as lemon and mandarin, green apple, white flowers and a slight exotic touch of lychee and mild spices, courtesy of the Gewürztraminer. On the palate, it is agile and vibrant, with refreshing acidity that cleanses and tightens, and a creamy texture that prolongs the flavours. The finish is long, slightly saline, with echoes of white fruit and hints of fresh almond.
Colet A Priori Brut does not seek to be indulgent, but rather revealing: ideal for those who enjoy sparkling wines with character, perfect both for aperitifs and for pairing with seafood dishes. A sparkling wine from Penedès that speaks clearly, precisely and without artifice.
