Description
To speak of Cims de Porrera Clàssic is to speak of bottled history. It is a wine that not only reflects the identity of Priorat, but also honours the tradition of a land that is in equal parts rough and generous. Behind this marvel is Cims de Porrera, a winery founded in the 1990s by the Pérez Ovejero family and the winegrowers of Porrera, with the support of oenologist José Luis Pérez. From the beginning, their commitment has been clear: absolute respect for the vineyard, the authenticity of the terroir and the most sincere expression of their centenary vineyards.
Cims de Porrera Clàssic is a single varietal Cariñena (100%), a grape that in Priorat reaches a unique depth and character. The vines, ranging in age from 40 to 100 years old, grow on steep slopes, with licorella soils (that crumbling slate so typical of the region) that forces the roots to dig deep in search of water and nutrients. The result? A wine with a marked minerality and amazing concentration.
Winemaking
The elaboration of Cims de Porrera Clàssic follows a meticulous process: manual harvesting, berry by berry selection, fermentation with autochthonous yeasts and an ageing of 24 months in French oak barrels. Then, it rests in large wooden vats before bottling. And here comes the magic part: it spends another three years in bottle before being released on the market. There is no rush, just time and patience to achieve a wine that borders on perfection.
Taste
The first time you taste Cims de Porrera Clàssic, you realise that you are in for something great. On the nose, it explodes with notes of ripe black fruit, plums and blackberries, wrapped in a spicy background of pepper and clove. It is not a wine that presents itself shyly; it envelops you from the first sip.
On the palate, it has a surprising balance. Powerful, but refined. The vibrant acidity maintains freshness, while the firm but polished tannins give it structure. Notes of cocoa, minerals and a hint of smoke, a legacy of those well-integrated barrels. And the finish... long, persistent, one of those that invite you to have another glass.
It is a wine to be enjoyed at leisure, to be shared with those who appreciate Priorat at its purest. With a good stew, red meat or simply with a conversation worth having, Cims de Porrera Clàssic is a perfect companion.
