Fermented with indigenous yeasts in stainless steel tanks. Second fermentation in bottle with a minimum ageing of 24 months. Bottled unfined, unfiltered, with no added sulphites and no final dosage.
Description
Chavost Blanc de Meunier Brut Nature is a champagne made exclusively from Pinot Meunier grapes by the Chavost winery in France.
The grapes used to produce this champagne come from vineyards that are cultivated with sustainable agriculture techniques and are located on a clay-limestone soil.
Winemaking
Harvesting is done by hand at the optimum moment of ripeness of the grapes. Vinification is done entirely in temperature-controlled stainless steel tanks.
Spontaneous alcoholic fermentation takes place at 17 °C with indigenous yeasts. Malolactic fermentation is also spontaneous at 20 °C with indigenous bacteria.
The wine is then racked into the bottle and aged for approximately 20 months before disgorging, without a gram of sugar or a single dose of sulphur. Once ready, it is not clarified before bottling, nor is it acidified or deacidified.
Taste
Chavost Blanc de Meunier Brut Nature is a champagne with very fine fruity and floral aromas.
On the palate, it is complex, rich and creamy with a moderate level of acidity, great breadth, a return of fruity notes, and finally, a real length and persistence - simply amazing!
