Description
Cascina Tavijn Rosett* is a unique expression that lies somewhere between a rosé and a red wine. Made from the Freisa variety, it combines succulent red fruits with a hint of spice, making it the ideal wine for spring.
Winemaking
Rosett* with its colourful label depicts an imaginative little girl in a fuchsia hoodie and red shoes, surrounded by multicoloured bubbles. This wine ferments spontaneously in steel tanks and demijohns with the same indigenous yeasts adhering to the grape skins themselves. It is then matured in the same vats for several months. It is bottled unfiltered, unclarified and without the addition of sulphur.
Flavour
Rosett* is a wine that stands out for its freshness and drinkability. On the nose the notes of wild strawberries, raspberries and cherries stand out. On the palate, the wine has a full mouthfeel but shows an astringent note from the tannin, albeit slightly. The finish is saline and very long, with a slightly frizzante touch that makes for infinite tasting.
