Description
The red wine Cascina Degli Ulivi Nibiô isan authentic expression of the Italian terroir. This wine is made from the Dolcetto variety, an ancient vineyard with red clusters that is called Nibiô in the local dialect. The vineyard where this vineyard is cultivated is characterised by a clay-limestone and clay-ferrous soil. Moreover, it is the result of an assemblage of different plots cultivated under biodynamic practices.
Winemaking
Harvesting takes place in mid-October, and the grapes are harvested by hand in small boxes of 20 kg. Nibiô undergoes a maceration and fermentation process for 4 weeks in contact with the skins, with two pumping-overs per day. After fermentation, the wine is aged on its fine lees in 2,500 and 5,000 litre oak barrels for 24 months. Indigenous yeasts are used for fermentation and no sulphites are added. In addition, no filtration is carried out and the wine is clarified naturally by decanting.
Taste
Nibiô is a wine with an alcohol content of 14.5%. As for its tasting notes, it presents itself as a structured wine with aromas of small red fruits and ripe plums. Its vigorous tannins give it a great ageing potential. Stefano Bellotti, describes it as a wine "rustic and wild in its youth, which transforms into an elegant man as the years go by".
