The first 'natural' wine they produced, the current 2019 Capficat, was produced with Xarel.lo from the Serral del Bosc vineyard, while future vintages come from different vineyards, looking for perfect skins, acidity and pH so that they can age the wine without using sulfites. The source changes in search of a style. It's pale, and the nose is quite muted and undeveloped; it feels really young and could have been from a much more recent year. It's transparent and pure, with no deviations, off aromas or flavors, with precision, purity and elegance. It went through full malolactic, has 12.4% alcohol and a pH of 3.1. It has concentration and power, keeping the balance and freshness. And time seems to have given it complexity and depth. It should continue evolving at a slow pace in bottle. 1,593 bottles produced. It was bottled in June 2020, but it will be launched at the end of 2024.
