The new red 2021 Cal Ganso La Rectorie was produced with an unusual 50/50 blend of Cariñena and Tinta Amarela from 17-year-old vines, and it fermented with some 10% full clusters and indigenous yeasts and matured in stainless steel with rackings every four months. It's austere and serious, with some earthy notes and a touch of elegant rusticity, 13.4% alcohol and a pH of 3.35. It has a strong personality, balance and freshness, a naked wine with no makeup. It finishes with very tasty notes and reminiscences of Mediterranean herbs. It should have an interesting evolution in bottle. 4,000 bottles produced. It was bottled in August 2023.

The production of Cal Ganso La Rectoria begins with a meticulous selection of grapes, followed by fermentation in stainless steel tanks with indigenous yeasts. Ageing takes place in old French oak barrels, where malolactic fermentation also takes place. This process gives the wine a distinctive character and complexity that reflects the terroir and the skill of its creators.
