Disgorged in April 2020, the latest rendition of Paillard's NV Dosage Zéro delivers aromas of ripe citrus fruits, yellow orchard fruit, fresh bread and beeswax. Medium to full-bodied, fleshy but incisive, it's fine-boned, dry and chalky, with a pinpoint mousse and a saline finish. This is a comparatively open, giving Dosage Zéro that's drinking well out of the gates.

Description
Bruno Paillard' s Champagne Dosage Zéro is a representation of the Maison's constant quest for purity, energy and harmony. This exquisiteness is the result of blending more than 30 different crus, selected among the noblest of the region.
Winemaking
The exclusive selection of the first pressing, known as the purest cuvée, from the three classic grape varieties, is vinified mainly in small oak barrels. The grape varieties that make up this champagne are Meunier (50%), Pinot Noir (25%) and Chardonnay (25%).
The use of reserve wines for this blend is essential. In fact, 50% of this blend is composed of wines from old vintages, using a method similar to the "solera", with traces of the first vintages, such as 1985. Moreover, the base wines have been vinified in different ways: partly in stainless steel, partly in barrels and partly matured in the bottle for more than 10 years. The refinement is prolonged well beyond the legal duration: from 3 to 4 years in the bottle on its own yeasts, followed by 6 months of resting after disgorging. As the name suggests, this champagne has no final dosage, which means that no sugar is added after disgorgement.
