Description
Bott-Geyl was born of a deep family conviction in the heart of Alsace, where wine-growing tradition is intertwined with a modern, biodynamic vision. Jean-Christophe Bott wanted to pay tribute to his great-grandfather Paul-Edouard by making a sparkling wine that captured the chalky, luminous essence of his plots. The decision was a bold one: to go for an Extra Brut profile in a region where many are looking for more indulgent styles. There are no compromises here.
In Bott-Geyl Crémant d'Alsace Extra Brut Paul-Edouard, the blend of Pinot Blanc, Pinot Noir and Chardonnay, grown under strict biodynamic viticulture principles, reflects chalky, loamy soils that, under the Alsatian continental climate, retain freshness and natural tension. The Crémant d'Alsace appellation brings tradition and rigour, but Bott-Geyl gives it a character of its own: precision, purity and marked minerality.
Winemaking
Hand-harvesting guarantees whole, perfectly balanced bunches for the production of Bott-Geyl Crémant d'Alsace Extra Brut Paul-Edouard. After gentle pressing, the must ferments in stainless steel tanks to preserve the clear expression of the fruit. The second fermentation is carried out in the bottle using the traditional method, with ageing on the lees for at least 36 months. This prolonged resting period refines the bubbles, adds creamy texture and complexity without detracting from its nerve.
The minimum dosage defines its Extra Brut character, highlighting its dry, straight and vibrant profile. Each disgorgement is executed with precision to maintain the wine's natural energy and identity as a premium French sparkling wine.
Taste
In the glass, Bott-Geyl Crémant d'Alsace Extra Brut Paul-Edouard shows a bright straw yellow colour with a very fine and persistent perlage. The nose is pure and precise: fresh lime, lemon peel, crisp green apple and white pear, accompanied by a delicate hint of brioche and toasted almond. On the palate, it enters with tension and verticality, marked by a firm acidity that defines its dry and mineral style. The bubbles are creamy but vibrant, supporting clean fruit and a very present chalky imprint. The finish is long, saline and elegant, with citrus echoes and a subtle hint of freshly baked bread.
