Description
Bonnardot Bourgogne Aligoté Sur Le Bois is a dry white wine made from Aligoté by the Domaine Bonnardot winery in the Burgundy region of France.
The Aligoté grapes come from two plots, planted more than thirty years ago. The first parcel comes from the hills of Santenay. The second part is located on a clay-limestone subsoil of the "Sur le Bois" Maranges appellation.
Winemaking
The grapes are harvested by hand at optimum ripeness. On arrival at the winery, they are carefully selected on the table. The grapes are then slowly and gently pressed in whole bunches, with slow fermentation in stainless steel tanks without sulphur. No oenological products are added.
Fermentation is carried out in stainless steel and the wine is aged for 12 months in barrels with natural decanting and light filtration before bottling.
Taste
Bonnardot Bourgogne Aligoté Sur Le Bois is a fruity, firm and distinguished white wine. On the palate, the acids are penetrating and sharp, but the barrel maturation provides fullness and roundness.
